I feel like I've been baking and cooking nonstop these days but I had no idea which recipe I should write first... I ended up choosing my most recent and simple one because it's easy to make and perfect to give as a gift. The flax and chia even make it a healthy gift. This granola isn't too sweet either and the tastes revolve more around the nuttiness of the roasted oats, but if you like your granola sweeter, I would suggest adding in an additional 1/2 cup of maple syrup. And of course, make sure the granola is properly roasted before you take it out of the oven - I can't tell you how many times I've eaten granola that's only been half baked.
If you don't have some of the ingredients and others instead, feel free to substitute! Other add-ins that would go well include coconut flakes, hemp, pumpkin seeds, sunflower seeds, and hazelnuts. If you want to add chocolate chips, make sure mix them in after the granola is out of the oven and cooled.

Ingredients
1/4 cup coconut oil
1/2 cup maple syrup
2 heaping Tbsp brown sugar
2 tsp cinnamon
1 Tbsp vanilla extract
1 1/2 cup chopped nuts (I used walnuts)
8 Tbps flax seed
8 Tbsp chia seed
3 cups rolled oats
1 cup dried cranberries (or dried blueberries would work too!)
1/4 cup coconut oil
1/2 cup maple syrup
2 heaping Tbsp brown sugar
2 tsp cinnamon
1 Tbsp vanilla extract

To prepare
- Preheat oven to 300F
- Mix together coconut oil, maple syrup, brown sugar, cinnamon, and vanilla extract in a large mixing bowl until fully combined.
- Add the rest of ingredients and mix thoroughly so all the dry ingredients are coated with the wet ingredients.
- Line two baking sheets with aluminum foil and divide the granola between them.
- Bake the granola for about an hour, stirring it every 20 minutes or so.
