I've had a bagful of hazelnuts lying around since June. My mom kept saying she wanted to make hazelnut toffee bark but of course, it never happened. And since she insisted that she was one day going to make such bark, I wasn't allowed to touch the hazelnuts to create something of my own.
But as the hazelnuts neared their expiration date, I decided to forgo my mother's threats. And this homemade nutella was born. It's a lot nuttier than the store-bought kind and in my opinion, a whole lot yummier...
I usually make nut butters at least once every other week, and my biggest concern is getting it to the right consistency. One time I stupidly added milk to my almond butter, thinking it would make the texture smoother (big mistake). If your nut butter insists on being crumbly, my suggestion would be to add oil of some sort (coconut oil is lovely and it adds a nice flavor as well).

Makes 1 jar
Ingredients
2 cups hazelnuts
2 Tbsp dark cocoa powder
1/4 cup sugar
1/2 tsp salt
1 tsp cinnamon
1/2 cup chocolate chips (melted)
coconut oil (optional - to adjust consistency)

To prepare
- Roast hazelnuts in a pan, stirring often
- Rub the skins off the hazelnuts with a clean towel.
- In a food processor, grind the hazelnuts until they turn into a paste.
- Add the cocoa powder, melted chocolate chips, sugar, salt, cinnamon, and coconut oil (optional).
- Keep processing until the paste turns smoother and into a butter.
- Put the hazelnut butter in a jar and enjoy for breakfast, snack, lunch, dinner, or dessert!
