- Preheat oven to 350F
- Mash banana and add in sunflower seed butter and vanilla in one bowl.
- In another bowl, mix together rolled oats, cinnamon, sugar, baking soda, flax seeds, chia seeds, and chocolate chips.
- Combine the wet ingredients with the dry ones until the dough has a consistency that can easily be made into small balls.
- Put parchment paper on a baking sheet and drop the dough by spoonfuls (about 2 Tbsps per cookie)
- Bake the cookies anywhere from 14-18 minutes. They will be slightly jiggly once taken out of the oven. But no worries! The cookies will set once cooled - wait about 15 minutes before picking one up.
