I like this pumpkin bread recipe because the extra banana makes it super moist. Moist and fluffy and spicy and fragrant and delicious! And who doesn't love streusel? I don't even feel guilty about putting so much streusel in this bread because it uses absolutely no butter - just almond butter. And the nutty taste of the almonds is unlike anything regular butter can even come close to. But in all seriousness there's two layers of struesel in this bread and it's probably the smartest decision I've ever made.
The only unfortunate thing is that I can't even eat it :( I'm going back on my gluten-free sugar-free cleanse in a last desperate attempt to get back on my healthy track...kind of inconvenient given that Halloween is just around the corner. Regardless, my family and friends raved about this bread so its a guaranteed crowd pleaser!
Ingredients
For Bread
1 3/4 cup pumpkin pie mix *
1 banana
3 eggs
2 2/3 cup flour
1 1/2 tsp baking powder
3/4 cup oil
1/2 cup water
3/4 cup sugar
2 Tbsp molasses
*you can use regular pumpkin puree as well, but be sure to add cinnamon, nutmeg, cloves, and all that good stuff if you do.
For Streusal
1/2 cup almond butter (or more, depending on the consistency you want)
1/2 cup flour
1/2 cup brown sugar
1 Tbsp cinnamon
optional: chopped walnuts, pecans, more almonds, oats, etc
- Preheat oven to 375F and grease 2 loaf pans
- Sift flour into a bowl and add the sugar and baking powder to it.
- In a separate bowl, mix together mashed banana, pumpkin pie mix, eggs, oil, water, and molasses.
- Combine the wet and dry ingredients with a spatula (be careful not to over-mix otherwise the bread will turn out chewy)
- In a separate bowl, mix together ingredients for struesal until you get a grainy, crumby consistency.
- Pour one layer of the batter on the bottom of each pan and sprinkle generously with streusal. Then pour a second layer on top, covering the struesel. Top with more struesel.
- Bake in the oven for about 1hr 20 minutes, or until a knife comes out clean when poked in the middle of the bread. Mine took about 10 minutes longer than recommended.
